I love the flavor of the meringue cookies, especially with a drop of good vanilla. Try drizzling with chocolate for an extra layer of flavor and remember, these make wonderful gifts.

Directions
Preheat an oven @ 100C.
Place a bowl over low heat and add the egg whites and sugar.
Mix well until the sugar is completely dissolved, you shouldn't feel any granules when rubbed between your fingers.
When done remove from heat and beat until soft peaks are formed.
Add vanilla (optional) and continue mixing.
You can pipe the meringue to a lined baking sheet and bake in the oven or you can add some colors and then pipe out your favorite designs and bake.
