Directions
Preheat your oven to 220ยฐC (425F)
In a large mixing bowl, whisk together the flour, baking powder, and salt
Add the cold cubed butter to the flour mixture. Mix with your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
Make a well in the center of the mixture and pour in the buttermilk. Stir with a fork until the dough comes together.
Transfer the dough to a floured surface and gently knead it a few times until it becomes smooth. Be careful not to overwork the dough.
Roll out the dough to about 1/2 inch (1.3 cm) thickness sheet with a rolling pin. Use a biscuit cutter or a glass to cut out biscuits.
Transfer the biscuits to a baking sheet and Bake the biscuits in the preheated oven for about 12-15 minutes or until they are golden brown on top.
While the biscuits are baking in the oven, prepare the gravy. In a large skillet or saucepan, cook the breakfast sausage over medium heat until it is browned and cooked through, breaking it up into crumbles.
Add flour and and stir well to combine. Cook for an additional minute to cook off the raw flour taste.
Slowly pour in the milk while stirring constantly. Continue to cook the gravy, stirring continuously , until it thickens to your desired consistency for about 5-7 minutes, just like you make a white sauce.
Season the gravy with salt and pepper .
Place the biscuits in a serving plate and pour the gravy over it while they're still warm and enjoy!
