This recipe shows how to make Easy Zebra Sponge cake at home. A zebra cake is a mixture of vanilla and chocolate cake that, instead of being marbled, is poured into the pan in such a way so as to create stripes as you would see on a zebra The chocolate cake is made from the vanilla batter itself, so you don’t have to prepare two completely separate batters.

Directions
Preheat the oven @ 160C
Add egg whites to a large clean dry bowl and beat until frothy
Now add 3 additions and beat the eggs until soft peaks are formed. Keep it aside
In another bowl add egg yolks, remaining Sugar, oil and vanilla essence and beat well until light and well combined.
Add milk and sifted flour and mix well
Gently fold in the whipped egg whites in two additions.
In another pan add cocoa powder and mixt it with half of the batter.
Pour this the batter to an 8 inch lined baking pan one scoop alternatively from the two batters.
Tap to remove any trapped air bubbles
Bake in the oven for 60 minutes or a until a skewer inserted in the middle comes out clear.
Tips :
- I wanted a dark chocolate stripe for contrast. I was going to use chopped chocolate, like in my marble cake, but that never gives me a very dark chocolate batter. And if I added *more* chocolate to darken the shade, the texture of the chocolate batter would be compromised. So let’s use cocoa powder.
- Add lemon juice ,vinegar or cream of tartar to the egg whites. This will give stability to the whipped whites.

- You can Place a dish with warm water beside the pan to keep the cake moist and crack less.
Alternative Ingredients:
Oil can be replaced with same quantity of oil.
All Purpose flour can be replaced with same quantity of cake flour
