Banana cake is one of the easiest cakes to make, And an eggless version is a winner among vegetarians.

Step 1

Preheat the oven to 180C and grease and line 2, 7-inch baking tin with baking parchment.

Step 2

In a lard mixing bowl, peel and add the bananas and mash it with a fork. Add milk, sugar, and oil. Whisk well to combine.

Step 3

Add the flour, cinnamon powder, baking powder, and baking soda and whisk together until thoroughly combined.

Step 4

Add vinegar and mix in just before it is poured into the mould.

Step 5

Pour into the prepared tin. Bake for 40 minutes, or until the cake has well risen and a skewer inserted into the center comes out clean.

Step 6

Cool in the tin for 10 minutes, then turn out onto a wire rack. Serve warm or cold in slices. You can top it with cream cheese frosting or simple whipped cream.

  • Adding vinegar or lemon juice will make the cake more soft and spongy
  • If the top of the cake starts browning too much, cover the top with aluminum foil or parchment paper while baking.
  • use well-ripened bananas to get great results.

  • Oil Can be replaced with melted butter.
  • Vinegar can be replaced with the same amount of lemon juice.
  • All-Purpose Flour can be replaced with wheat flour or cake flour.
