They are made in slightly different variations in different parts of India. These delicious onion fritters are a version popular in Kerala and are called ulli vada and are very easy to make and are so delicious.
And I personally believe that these are the most delicious form of all onion snack recipes around the world. If you love to make onion rings, please refer to my recipe.
Directions
Peel, rinse and then thinly slice the onions and place then in a mixing bowl.
Add ginger, curry leaves, green chili, salt and mix well and set aside for 10 minutes.
The onions will release the juices by this time, and you do not need any extra water for the batter.
Add the flours, chili powder and mix well.
Take small portions in your palm and make small round patties out of it.
Heat oil for frying in a pan. Once the oil is hot, turn the flame to medium and add the patties into the oil.
Fry the onion fritters on one side for 4 minutes on a medium flame. Or until one side turns light golden, then turn them over and fry for another 3 minutes or until the onion fritters turn crisp and golden.
Do try the recipe and let me know how it turned out. If you like it please like and share.
