Preheat the oven @ 180C
Add sugar to a pan over low heat and heat it untils it caramelises. That is when the colour turns dark brown but make sure it does not burn.
Add water and boil until it reduces to half .
In a large bowl add egg, sugar, vanilla, oil and beat well until it turns light and airy.
Add the dates and mix.
Sift in the dry ingredients and fold gently until everything is incorporated. Don’t over mix the batter or else you will end up with a rubbery textured cake.
Add the carrots and mix .
Transfer to a 6 inch baking tin and bake it in the oven for 40 to 45 minutes. Or until a skewer inserted in the middle comes out clear.
