This is a simple and delicious mango cake recipe which is very soft and moist. The season of mangoes are here and you cannot miss making this moist delicious mango cake . This Mango cake recipe is eggless and is vegan.

Directions
Preheat the oven @ 170C
Take 1 cup of diced ripe mango and grind it to a smooth paste
Add the mango puree, sugar and oil to a pan and whisk well
Sift in the dry ingredients and fold gently until everything is incorporated. Make sure not to over mix the batter.
Transfer to a 6 inch baking tin and bake it in the oven for 45 to 50 minutes.Or until a skewer inserted in the middle comes out clear.
You can do any frosting of your choice. Here i used whipped cream and mango glaze. Cream cheese frosting works well with this recipe. If you are a vegan use the glaze alone.

Tips:
- While choosing mangoes choose fresh and delicious mango. The taste of the cake depends on the mango you use

- Spice mix I used is a mix of powdered cinnamon, cardamon and cloves. If you dont have spice mix add some cardamon powder or cinnamon powder or even vanilla or mango essence.
