No Bake Strawberry Cheese Cake Recipe

No-Bake Strawberry Cheesecake is an easy cake to make during the strawberry season. Even though it has a different texture than that of a Classic baked Cheesecake , this no-bake cheesecake is equally dreamy and truly easy.

This No Bake Strawberry cheesecake filling is light and fluffy and rich in  strawberry flavor and topped with fresh strawberries. Also try my no bake  Kiwi Cheese cake.



Step 1

Crush the biscuits to a coarse crumb. Combine crumbs with melted butter.

Step 2

Prepare the cake pan by buttering the sides and bottom and adding parchment paper to the bottom.

Step 3

Add the gelatin to the warm water and stir to dissolve and set aside.

Step 4

Transfer it to the bottom of a 9-inch springform and compact it.

Step 5

Chill it in the refrigerator while preparing the filling.

Step 6

Add the cream cheese to a large bowl and whisk it until soft.

Step 7

Add half of the powdered sugar, and jam, and whisk it until soft and fluffy.

Step 8

Add in the cream, and vanilla and continue whisking until your mix has thickened up well.

Step 9

Now add the gelatin and whisk well until everything is mixed up well.

Step 10

Pour the cream cheese mixture over the prepared crust, cover with a lid or plastic wrap, and refrigerate for a minimum of 4 hours or overnight.

Step 11

Unmould and Decorate with whipped cream and strawberries.



  • You can store the cheesecake for up to 3 days.
  • You can use Mascarpone cheese instead of cream cheese which elevates the flavor and texture of this easy no-bake cheesecake to a new level.
  • You can replace strawberry with any other fruit to get a different flavor of cheesecake. Tru by Kiwi Cheese Cake 
  • You can use a food processor to crumb the biscuits or Place them in a resealable plastic bag and crush the biscuits with your hands or with a rolling pin.
  • If no jam is available for the cheesecake filling, mash the strawberries with a fork in a mixing bowl add some lemon juice and add them instead of the jam. You can also use strawberry syrup.
  • If you want to try a vegan and dairy-free substitute for whipping cream, try whipping coconut milk instead.
  • For extra sweetness and to enhance the strawberry flavor, you can use strawberry-flavored Jell-O instead of gelatin.
  • Wrap the bottom piece of your springform pan with parchment paper or tin foil to easily unmould the cheesecake when done.
