An easy instant rich plum cake with mixed dry fruit, nuts. It is a last minute Christmas cake recipe which requires no soaking and no alcohol.

Directions
Preheat the oven @ 180C.
In a saucepan, add sugar and let it caramelize until it becomes dark brown.
Add water and let it boil until no crystals are left in it.
Add in the mixed raisins and let it simmer until the mixture thickens and the dry fruits absorb all the juices and become plum and soft like soaked fruits.
Remove from heat and add other fruits and tutti frutti which are soft and do not need any more softening.
Add two eggs which are beaten until light and fluffy and mix well.
Add oil and mix well.
Now add the mixed fruits, baking powder, spices and salt to the flour and mix well.
Add the wet ingredients to the dry and fold gently until incorporated.
Transfer to a greased baking pan and bake for about 90 minutes, or until a skewer inserted in the middle comes out clear.
Tips
● If you bake the Plum Cake slowly at a lower temperature like 160° C to 170° C so that it becomes really flavorful and the texture comes out just right.
● If you’re using normal sugar i.e. white sugar, and you’re not using molasses or treacle, you can caramelize the sugar and add to the recipe. In a sauce pan add the sugar and heat till it starts to melt and get a nice brown colour but do not over caramelized the sugar. Turn off and add 1-2 tbsp water and stir well and let it cool down completely before using in the recipe.
● Try to chop the dry fruits and nuts into equal-sized pieces.
