Using leftover cake to make cake pops is the best quick and easy way !!
When you have a lot of leftover cakes during holidays and Christmas, you can convert them into these wonderful cake pops.
Just crumbling the cake into the frosting, mix them together to form a truffle-like ball.
Pop a stick in it and coat with melted chocolate.
Directions
Crumble the cake up in a food processor or by hand.
Add in the frosting a little at a time until the cake can hold its shape once formed into a tight ball.
Add the chopped strawberries and mix well.
Melt some chocolate in a microwave by adding 2 tbsp of milk.
Take small portions of the crumble and Roll it tight into a ball shape
Insert a popsicle stick into it. At this point, you may freeze the pops for an hour if you choose to dip the pops in chocolate ganache. In order to avoid the hassle, I am just coating a thick consistency melted chocolate over it.
Coat the balls with melted chocolate.
Tips:
Too much frosting produces a super wet and greasy cake pop– not the deliciously moist pop you were expecting. So add *just enough* frosting to barely moisten those cake crumbs so that they hold together when rolled.
You can freeze the cake balls before coating with chocolate to avoid any breakage during the process.
If you want the coating to be smooth and perfect, then you can make chocolate ganache in a flowing consistency to dip the pops.
Sprinkles are necessary, of course, if you go for a thick coating which is more easy to work. You can also use candy coating/candy melts, almond bark, or pure white chocolate gratings.
