Macaroni and Cheese or simply Mac and Cheese is my daughter’s favorite. 

Nothing is more comforting and classic like mac and cheese with boiled Macaroni in gooey cheese sauce. I like it to be creamy and hot. 

To take it to the next level you can bake it topping it with cheese and bread crumbs. 

What makes this Mac and Cheese special is the use of three different cheeses which gives it a unique flavor and character. You can use any combination of cheese.

Step 1

Boil the pasta in water by adding salt according to the package instructions or for 10 minutes and drain. You know the pasta is cooked when it can be cut easily with the edge of a spoon.

Step 2

Add butter to a pan over medium heat.

Step 3

When it is melted add all purpose flour and stir for 2 to 3 minutes, until the raw taste is gone.

Step 4

Add pasta water and stir until combined and homogeneous. Then add milk and stir until smooth and creamy.

Step 5

Add pepper powder, chilli flakes, nutmeg and mix well.

Step 6

Cook the sauce until it’s nice and thick.

Step 7

Add in shredded cheeses, stir well.

Step 8

Combine cheese sauce with cooked pasta.

Step 9

Add salt if required. As pasta water and cheese contains salt, please check before adding the salt.

Step 10

Serve hot.

Tips :

Using pasta water will help to thicken the sauce.

Use room temperature ingredients .Keep the  milk out while the water for the pasta is coming up to a boil.

You can use your favorite cheese combinations.  You can use cheddar, Parmesan, Mozzarella, Gouda, Smoked Gouda, Swiss, Monterey jack, Colby jack or Colby.  Always use block cheese instead of per shredded cheese.
