This spicy chicken cutlet is a quintessential snack on every special occasion and my all time favorite. Chicken Cutlets can be an appetizers, a starters or a tea time snack.This Chicken Cutlet can be used as a patty in a burger or a wrap and make it a breakfast, Lunch or Dinner. If there are any leftovers, I pop them into the freezer and use within a month.

Directions
Heat Oil in a pan on medium heat
Add chopped ginger, garlic and saute until it emits aroma.
Add Onion, green chillies and curry leaves.
Add salt, chili powder & garam masala. Stir for 2 minutes
Add minced chicken. Mix well.
Add enough salt, cover and cook for 15 minutes.
Open the lid and cook until all the water is evaporated .
Transfer to a mixing bowl and the mixture to cool.
Once it is cooled add mashed potatoes & mix well. Potatoes cooked well by adding salt and then mashed.
Add some bread crumbs to absorb any excess moisture in the mixture. This will help the cutlets to hold its shape .
Make small balls with the mixture, roll and flatten into shape.
Take bread crumbs and Beat the eggs in two separate containers.
Dip each cutlet in the beaten eggs & then coat with bread crumbs.
Deep fry in oil or shallow fry on both sides until golden brown.
Serve hot with tomato ketchup.
