This simple and Easy apple cake is light and fluffy, loaded with fresh apples, and topped with a crunchy cinnamon sugar apple layer! This is one of the best apple recipes that is snackable and can be taken as a breakfast. This cinnamon apple cake recipe is easy to make and very soft and fluffy with loads of apple and cinnamon flavour in it.

Directions
Preheat oven to 170 C (340 F) Grease and line loaf pan with baking or parchment paper.
You can use any kind of apple you like, I use red Royal Gala apples. Peel and then chop your apple into small pieces discarding the core.
Mix Apple, Brown Sugar , Butter and Cinnamon powder and keep aside
Beat Egg and Sugar together until pale and well combined.
Then add Oil, Yogurt and Vanilla and whisk to combine.
Sift the dry ingredients into the wet ingredient and mix until combined – make sure not to over mix.
Layer a lined baking tray and layer the batter and apple crumble alternatively as shown in the video.
Bake until golden and a skewer inserted in the middle comes out clean. (170 degree Celsius for 40 to 45 minutes)
You can Drizzle over some sweet sugar glaze and serve!
Tips :
- To make the glaze, mix together sugar and 1 tablespoon of milk. Stir until smooth. If the glaze is too thick, add an extra tablespoon of milk. Drizzle glaze all over the cake.
Alternative ingredients:
Egg : 1 tbsp of yogurt for each egg
Yogurt : Buttermilk
Oil : Butter melted
