These crisp buttery cookies are cut into festive shapes and filled with hard candies, then they’re baked and the candy melts into an even layer for a beautiful stained glass effect.
A delicious cookie to add to the cookie tray this year,
Directions
To the bowl of a stand mixer with the whisk attachment, add butter at room temperature and beat for a few minutes.
Add sugar and beat on MED speed until smooth and well combined. Mix in the eggs, one at a time, until combined. Add vanilla and mix.
Change the whisk attachment to a flat whisk and add dry ingredients (flour, cornstarch, and salt), and whisk to combine. and mix on MED LOW speed.
Let mix for 3-5 minutes, and you'll see a crumbly dough formed.
Transfer the dough onto the work surface and roll dough to a thickness of about 1/4 inch. Flouring the work surface and rolling pin is helpful, as is rolling dough out between 2 pieces of parchment paper.
Cut into shapes and then cut out some shapes in the middle. and place cut-out dough pieces on prepared baking sheets. Refrigerate for 15 minutes (not necessary if you are in a cold place)
Add some crushed candies to the middle of the cookie.
Preheat oven to 180C or 360F
Bake cookies for 10 to 12 minutes, or until edges appear set. Cookies won't be golden on the top.
Remove from the oven and let the cookies cool down before you remove them from the sheet.
Tips:
- Let the cookies cool completely before you remove it from the parchment paper or else the cookies may get stuck to parchment paper .you can alternatively use silicone baking mats.**You can use a toothpick if needed to help remove the centerpiece.
- If you’d like to be able to hang them with a ribbon then cut a small hole using a standard-size plastic straw near the top before baking.
- You can use a toothpick if needed to pop out the bubbles that may form in the candy part
- Any semi-translucent hard candy works for this recipe like Jolly Ranchers, Life Savers, or clear lollipops
