This flourless chocolate cake, is rich in chocolate and is most decadent. A thick icing of chocolate ganache glaze takes it over the top. It contains neither flour nor leavening; and of course, it's also ideal for those looking to avoid gluten.

Directions
Preheat the oven @ 180 C
Whip the egg whites until it reaches stiff peaks adding sugar in 3 additions and keep it aside.
Mix together the egg yolks, butter, vanilla and cocoa powder and incorporate it into the egg whites.
Pour the batter to a rectangular baking tray and bake for 15 to 18 minutes . Take it out of the oven and let it cool down
Prepare the chocolate mousse by whipping the cream until thick by adding sugar and then adding the cocoa powder and beating until completely incorporated.
Cut the cake into 3 equal pieces. Apply mousse over a cake piece , level it and then place another piece over it and repeat the process , as shown in the video. Freeze it for 10 minutes.
Add the water to the gelatin and let it bloom for 10 minutes. Add chocolate to the cream and microwave it for 60 seconds. Add the gelatin and stir until everything is completely dissolved.
Take the cake out of the freezer and pour the glaze over it. Let it chill in the refrigerator for 30 minutes or until it sets. Take it out and cut as desired and serve.
Tips:
Whip the egg whites perfectly until stiff peaks ate formed. This is crucial for the sponginess of the cake.

Alternative ingredients:
Cocoa powder )can be replaced with chocolate and chocolate with cocoa powder.
