Best Spongy Mini Cupcake Recipe : This Mini Cupcakes are so Soft and Fluffy that it will melt in your mouth. 

This is a lemon cupcakes recipe which is easy to make and you can also make Lemon cake with this batter if you pour it to a cake tin. 

Top it with lemon curd and it will taste divine

Step 1

Preheat the oven to @175C.

Step 2

Take a bowl and add eggs, salt, and sugar (in two addition).

Step 3

Beat until light and fluffy.

Step 4

Add Milk, vanilla extract, lemon juice, oil, and the zest of a lemon, and mix well.

Step 5

Add all-purpose flour, baking powder, and baking soda.

Step 6

Gently fold with a spatula, or Use the hand mixer on low speed to incorporate easily.

Step 7

Add corn flour and mix it well.

Step 8

Now transfer to a hopper for ease of pouring into the cups.

Step 9

Fill 2/3 of the muffin cup.

Step 10

Bake in a preheated oven at @175C for 15 to 20 minutes.

Step 11

Decorate with your favorite topping. or you can have it as it is.
